Flavors of the Southwest - From Sedona to Winslow, AZ on May 08, 2024 at 6:00PM - La Cuisine

Chef Claudia has recreated the creative menu of the Turquoise Room in Winslow, Arizona, just for you Bozeman. Here's what's on the menu for this all-hands-on cooking class.

To start, enjoy a Prickly Pear Margarita while you watch a couple of class members prepare Toticos Azules (chips made with Masienda Heirloom Blue Corn Flour) and Chile de Arbol Salsa (made with dried chiles de Arbol, almonds, and tomatoes).

For your main course, you will actively prepare the Tinga Pork Tenderloin. It's a quick version of the pork shoulder recipe made in a smoky tomato-ancho chili sauce. You will also make the Three Sisters toss, including maple-glazed butternut squash, cinnamon-chili corn and hominy, and spiced kidney beans. The toss will be served with fluffy cilantro and pepitas rice.

Discover the secrets behind our Elote Cake recipe, a unique sweet and spicy cake that is nothing like any cornbread you've had before. This delicious treat can accompany our meal, and if you are lucky enough to have leftovers, you can enjoy them with your coffee the following morning.

Suggested Wine Pairing:

  • White- Torrontes, Colome, Salta, Argentina 2021
  • Red- Pais, Bouchon 'Salvaje,' Maule Valley, Chile 2021

*To purchase the wine pairing, please stop by The Wine Gallery. Let them know you are purchasing these wines for a LaCuisine class and receive special pricing. The Wine Gallery is open until 6:00PM, so either pick up earlier in the week or stop by on your way to class -- they are literally across the street.

**Please note our class policies at https://lacuisine-bozeman.com/pages/class-policies. Unfortunately, we are unable to accept cancellations. Our chefs have worked very hard to prepare for the evening's event and ingredients are purchased in advance. If you call to let us know about a conflict, La Cuisine may be able to help fill your seats.
